Rockstar has confirmed more than 200 vehicles across cars, motorcycles, helicopters, planes and boats, all with fully interactive interiors. That last detail is the one worth pausing on: 'fully interactive interior' on every vehicle in a 200-strong roster is an enormous amount of art budget, and it signals how much of the game is expected to be spent inside a car.
The systems around vehicles changed more than the roster did. Fuel is a real resource and gas stations refuel and repair. Crash damage is dramatically more detailed than GTA V's, with heavy collisions triggering a brief slow-motion effect. And with the new inventory limit, your trunk is your armoury - Which turns 'where did I leave the car' into an actual tactical problem.

Why the trunk changes the game
In GTA V a car got you to the mission. In GTA VI the car is the mission's logistics.
You carry two rifles and two pistols. Everything else lives in the vehicle, which is why the carry limit and the trunk are really one system.
What that costs you when it goes wrong
Lose the vehicle mid-firefight and you lose everything that was not in your hands.
It is a small rule with large effects. Parking becomes a decision. Stealing a car mid-mission becomes a repair strategy rather than a joyride. Police pursuit gains a second layer of pressure GTA V never had.
What the trunk system changes

Fuel and repair
Gas stations work. Vehicles use fuel and can be refilled, and footage suggests repairs happen there too.
This is Red Dead design, not GTA V design
Fuel is a simulation feature. It sits closer to Red Dead Redemption 2 than to GTA V.
It fits the wider pattern of GTA VI slowing the loop down, which our vehicle systems guide traces across the whole model.
The open question is pacing
How fast fuel drains has not been shown.
So we do not know whether it is a real constraint or a texture detail you top up between missions.
