Rockstar has not published a weapon list, and it will not before launch. What the Extended Look and the trailers did establish is the shape of the system, which matters more than the roster: GTA VI has weapon weight.
The confirmed carry limit is two rifles and two pistols on your person, with the remainder stored in a vehicle. That is the Red Dead Redemption 2 rule, transplanted into a modern setting, and it converts weapon choice from a menu into a plan.
The other structural change is that lethality is now optional in a systematised way. Zip ties, human shields and non-lethal police encounters mean a firefight is no longer the only resolution to a bad situation. That is new for the series.

The carry limit, and why it is contentious
GTA V let you carry everything at once. You held a button, spun a wheel and picked from a dozen guns. Nothing you chose cost you anything.
GTA VI changes that. You carry two rifles and two pistols on your person. The rest stays in your vehicle.
What the limit changes before a fight
Weapon choice becomes a plan instead of a menu. You decide what the job needs before you leave the car.
Red Dead Redemption 2 used the same rule. Moving it into a modern city makes your vehicle part of your loadout, and it makes driving back to it a real decision.
Why players are split on it
Some players want the loose, arcade feel of the older games. To them the limit will feel fussy.
Others thought GTA V's combat had no weight. To them this is the fix. Both readings are fair. Neither can be settled until people have played it.

Killing is no longer the only option
Zip ties let you restrain someone instead of shooting them. You can also take a human shield, or carry a body and hide it.
At low wanted levels the police try to arrest you rather than shoot. Whether a whole mission can be finished without killing anyone is still open. We track that question on the non-lethal play page.
Each protagonist fights differently
Jason has a slow-motion mode that marks enemy weak points. Lucia has a single-shot slow-motion trigger.
The two abilities suit different jobs, which is the clearest sign yet that the pair are not meant to play the same way.
