Handguns are the one firearm class GTA VI lets you hide. Rockstar North's Rob Nelson told TGG's preview that Jason and Lucia can always keep two concealed handguns on them, while anything larger has to be worn or held in plain sight.
That makes the pistol the gun you can walk into a shop with, and it makes choosing which two worth getting right.
You can always have two concealed handguns on you whenever you want. You can carry two long guns, and they will be visible on your back and in your hand.

What the footage actually shows
Handguns are the most common guns in Rockstar's material, but only a handful of shots show them clearly enough to identify.
Trailer 1, 1:09 to 1:18
Lucia walks into a convenience store in a red bandana at 1:09. At 1:17 she comes through the doorway with a pistol raised and Jason behind her, and at 1:18 the two of them hold handguns up at the entrance.
PC Gamer identifies Jason's gun in that robbery as the Capo pistol. It is the only handgun moment in the 2023 trailer.
Trailer 2 and the screenshots
GamesRadar spots Jason firing a Beretta-style pistol from a vehicle in Trailer 2, the same shape as the gun he holds on a motorcycle in an official screenshot.
Lucia's K17 appears up close in the screenshot of her preparing to face an armed intruder, which is why the Ultimate Edition's engraved version reads as her gun rather than a random model.
After the Extended Look
Previews of the August 27 gameplay presentation add one handling detail: pistols fire as quickly as the player can press the trigger, according to VICE's roundup of July previews.

Two concealed: what the rule changes
In GTA V the handgun slot sat at the top of an eight-slot weapon wheel, and you could carry every pistol you owned. GTA IV was stricter: one weapon per class, so a new pistol replaced the old one.

GTA VI splits the difference
Two handguns, both hidden, both always available. That is more than GTA IV allowed and far less than GTA V.
The limit matters less than the word concealed. Pistols are the only firearms Nelson described that way.
Why concealment matters now
Nelson's point to TGG was that people now react to weapons they can see. A long gun on your back passes; one in your hand makes people move away.
A holstered pistol is never visible until you draw it, which makes the sidearm the gun for walking up to a job, not just a backup for when the rifle runs dry.
