GTA 6 has confirmed hunting, fishing, diving, kayaking, golf, tennis, gym training, pool, street racing and dirt bike racing. Side activities are how an open world proves it is a place rather than a mission list, and that list is already longer than GTA V's was at this point.
GTA VI's confirmed list is already longer than either at the same point before launch.

Several of these double as dates
Pool, mini golf, kayaking, gym workouts and shopping were all shown as things Jason and Lucia do together.

The hunting and fishing carry-over
Both return from Red Dead Redemption 2, and both fit Leonida better than they would have fitted San Andreas.
Florida's outdoor culture is fishing culture
The Keys and Grassrivers exist partly to support it.
That is not decoration. Those regions are built around water.
The open question is depth
RDR2's hunting was a full system: pelt quality, tracking, crafting.
A GTA version could be that, or it could be a minigame. Rockstar has not said which.
